My husband and i currently rent a room in a house with a couple of guys in their mid 20's. It's only temporary until i get work and we can afford our own place. They have no idea about cooking, cleaning, laundry....need i go on!! Hehe. So in lieu of some of our rent i do the housework which works out for everyone! But i seriously cannot wait to get a job!! Ugh!
Cleaning out the fridge on a regular, almost daily, basis is one of the fun jobs >.<.
One of the boys mum's left a big bowl of fresh strawberries from her garden...and as a surprise to me they didn't eat them, ok i nicked a couple, i mean who can resist? SO i thought this morning i would salvage the "un mouldy" ones, wash them off, cut them up, drizzle with vanilla and throw them into some cupcake batter. I bet they eat them now!!

Fresh Strawberry Cupcakes ~ Recipe HERE Courtesy of JustJenn!
Ingredients:
1 stick butter (1/2cup) softened
1 cup granulated sugar
2 eggs
1-1/2 all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup milk
1-1/2 teaspoons vanilla
1-1/4 cup FRESH strawberries, chopped
Preheat oven to 350F/180C degrees. Prep a cupcake pan with liners.
In a large bowl, cream the butter and sugar until fluffy.
Add the eggs one at a time, beating well after each addition.
In a separate bowl combine the flour, baking powder and salt.
Add the dry ingredients to the creamed mixture, alternating with the milk. Mix until blended. Fold in the vanilla and strawberries.
Fill cupcake cups 3/4 full, bake 20+ minutes, until you get that lovely clean toothpick. Cool, and frost. Makes 12 cupcakes.
Personal Notes:-
The only twist i gave to this batch was a little 40g packet of strawberry jello i had on the shelf for extra flavour and colour!
I baked mine for 30 minutes, they came out perfect! Soft, moist, fluffy and delicious! I didn't ice them because they taste so good on their own, i was afraid to ruin them!
I will definately be using this recipe again!
I'm just wondering what the 20something year old guys think of bright pink cupcakes...heheh! They are a gorgeous color!
