pizza pockets



Thanks to Our Best Bites we had a new hit for our "easy" dinner tonight! Pizza hot pockets. My boys are going through a pizza phase this week so i thought i'd try something new!



We had pepperoni, bacon, shallot and cheese with a homemade tomato sauce! A little juicy, maybe we will make sticks and dip them in the sauce next time......but SO delicious! Be great for a picnic lunch or lunchbox treat! The bacon bit on top is how we told the different fillings apart as we each made our own! Lots of fun!



Pizza Dough

adapted from Our Best Bites

1 1/2 cups warm (105-115 degrees) water
1 Tbsp. sugar
1 Tbsp. yeast
1/2 tsp. salt
3-4 1/2 cups flour

In a large bowl combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly.

Add salt and stir. Add 1 1/2 cups flour and mix well.
Gradually add more flour (usually between 3-4 cups, depending on your elevation and your humidity) until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.

Spray with cooking spray or rub oil in a glass or metal bowl and place dough in the bowl. Cover and allow to rise for 45 minutes or until doubled in size.

Remove from bowl and place on a lightly-floured surface. Spray a baking sheet with cooking spray. Roll out into a rectangle to cut pieces out of or a circle for a pizza base.
This is where you fill and roll your pieces or top your pizza....the variations are endless!

Cover pan and allow dough to rise for another 30 minutes. When there's about 15 minutes to go, preheat your oven to 425. When done rising, bake for 10-12 minutes or until golden brown.

  1. I just came home from the gym; you have NO IDEA how hungry I am looking at these!!! but I have a friend's wedding to go to in 3 weeks and, so, sigh, I'm gonna just drink a smoothie and have my tofu soup :(
