chicken veggie nuggets


These little guys were a huge hit with our son! How cool, star shaped chicken nuggets, the other kids at school were green with envy! So quick and easy to make, and deliciously healthy!


I found the recipe while i was browsing over at Cheeky Kitchen!


Chicken Veggie Star Nuggets
original recipe & idea from Cheeky Kitchen

1lb (500g) chicken mince
1lb (500g) mixed frozen veggies, defrosted and roughly chopped
1 egg
1 sachet powdered Bovril chicken stock
3 cloves of garlic, minced
1 medium onion, finely chopped
Salt & pepper
2 cups breadcrumbs

Mix everything together in a bowl.
Sprinkle breadcrumbs on a large chopping board.
Spread out chicken mixture on top of the breadcrumbs until 1/2 inch thick.
Sprinkle more breadcrumbs on top of the chicken mixture.
Cut into desired shapes.
Transfer shapes to a baking sheet which has been lightly sprayed with nonstick cooking spray.
Bake at 400F for 14-16 minutes, or just until the chicken is cooked through.

We served this with BBQ sauce, DELICIOUS!!!
