carrot cake

a delicious and simple cake. i'm so glad i found this recipe years ago, it never fails me. it's one recipe that you remember how to make and it is always a hit. i have added pineapple, walnuts, extra carrot and it always turns out! my husband absolutely LOVES this one. i swear if i wasn't around it would be eaten before i knew it =) this recipe turns out a little gooey but tasty.....but it's all good!

1 cup vegetable oil
2 cups sugar
3 cups all purpose flour
3 tsp baking powder
3 eggs
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
4 large carrots, grated

mix and pour into one 24cm cake tin, or three 20cm tins (if you want a layer cake)

i greased the whole tin and lined the bases of my tins, i hate it when my cakes don't come out, better to be safer than sorry...

bake for 20 - 30 minutes at 180C/350F

or until cooked through the centre

remove from tins, cool and ice with my favourite frosting to make and eat cream cheese frosting!

simple, easy, eat. this carrot cake recipe always turns out wonderful......
