greek style chicken meatballs


I've been looking around for different ways to cook chicken, i love chicken, particularly crumbed and dressed in pyjamas hehe (parmigiana) but you can only have that so many times and you start to crave something new. As you all know i'm a big fan of browsing Flickr AND all the wonderful, creative, inspiring food blogs out there!


So as i was browsing i found a recipe for Spanakopita Meatballs on The Creative Pot and boy was i glad i found this blog and this recipe!

Spanakopita Meatballs
Makes 40 (approx) I managed to get 54 x 1 inch bites!

1 bunch spinach, washed and stalks removed
(i used 250g frozen chopped spinach)
500g (1 lb) chicken mince
1 medium onion, finely chopped
1 tsp minced garlic
100g feta, crumbled
1 tsp greek herb seasoning (or use a mixture of rosemary & oregano)
1/2 tsp salt
1 egg
1/4 cup breadcrumbs
(i added 1 sachet of Bovril chicken stock powder for seasoning....)

1. Finely chop/shred the spinach
(if you aren't using frozen chopped already)
2. Mix everything together in a large bowl, then form into small balls using your hands.
3. Bake in the oven at 180C (350 F) for about 20 - 30 minutes or until cooked through and browned on top.

Serve with a big green salad and sweet cherry tomatoes. Alternatively, use them as stuffing for pitas with tzatziki sauce and fresh lettuce.

I froze half of the meatballs uncooked ready to bake when needed, as it makes a lot!

These are really delicious!! =) I bet they'd make a great cocktail food on little toothpicks and with tzatziki dip!
